Pineapple Meat Loaf - cooking recipe

Ingredients
    1 1/4 lb. lean ground beef
    1/4 c. chopped onion
    1/4 c. chopped bell pepper
    1 egg, beaten
    6 soda crackers, crushed
    1 tsp. salt
    1 small can crushed pineapple, drained (reserve juice)
    1/2 c. catsup
    1/3 c. catsup
Preparation
    In a large bowl, combine beef, onion, bell pepper, egg, crushed crackers, 1/2 cup catsup and 1/2 cup pineapple.
    Press in a loaf pan.
    Sprinkle with remaining pineapple.
    Combine 1/3 cup catsup and pineapple juice.
    Pour over meat loaf.
    Bake at 425\u00b0 for 1 hour.
    (Bake covered for the first 30 minutes.)
    Serves 4 to 6.
