Pear Mincemeat - cooking recipe

Ingredients
    7 lb. pears or 1 gal. pears (measured after grinding)
    1 lemon, ground
    2 pkg. (1 lb. each) raisins
    6 3/4 c. sugar
    1 Tbsp. cloves
    1 Tbsp. cinnamon
    1 Tbsp. nutmeg
    1 Tbsp. allspice
    1 Tbsp. ginger
    1 c. vinegar
Preparation
    Wash, cut, press through sieve.
    Measure pulp.
    For each cup of pulp, use 1 cup sugar.
    Heat, stirring constantly 20 minutes. Cook slow, do not boil.
    Pour into sterile jars, leaving 1/4-inch headspace.
    Adjust scalded lids and place in boiling water bath for 10 minutes.
    One cup pulp equals 1/2 pint jam.
