4 c. spaghetti squash, baked, steamed or microwaved
4 eggs, slightly beaten
1/4 c. onion, minced
1 c. Parmesan cheese, grated
1/2 c. flour (all-purpose, unbleached)
1/2 tsp. salt
1/8 tsp. pepper

Substitute zucchini (or summer squash) puree for milk in prepared pancake mixes.
Add steaming juice to thin, if necessary.
