Zucchini Bread - cooking recipe

Ingredients
    1 c. brown sugar
    1/2 c. margarine
    1 c. shredded zucchini
    8 oz. can crushed pineapple with juice (reserve 1 Tbsp. juice)
    2 eggs, slightly beaten
    2 c. flour
    1 tsp. baking powder
    1 tsp. cinnamon
    1/2 tsp. salt
    1/2 tsp. allspice
    1/2 c. chopped nuts
    1/2 c. coconut
Preparation
    Grease and flour 9 x 5-inch loaf pan.
    Beat brown sugar and margarine until light and fluffy.
    Stir in zucchini, pineapple and eggs.
    Add flour, baking soda, cinnamon, salt and allspice.
    Blend well.
    Fold in nuts and coconut.
    Bake 60 to 70 minutes at 350\u00b0 or until toothpick comes out clean.
    Cool 10 minutes.
    Remove from pan.
