1 Tbsp. sugar
2 tsp. baking powder
1 tsp. salt
1/2 tsp. ground cinnamon
1/2 tsp. ground ginger
1/2 tsp. ground nutmeg
2 tsp. grated lemon rind
1 egg, lightly beaten
1/3 c. corn oil
1/3 c. milk
1/2 c. pureed fresh or well drained canned peaches
1/2 c. finely diced peaches (fresh or canned)
2 Tbsp. sugar
1 tsp. ground cinnamon

Spray twelve 2 1/2-inch muffin pan cups with nonstick vegetable cooking spray.
