Spiced Zucchini Bread - cooking recipe
Ingredients

3 c. all-purpose flour
2 tsp. soda
1 tsp. salt
1 1/2 tsp. cinnamon
1/2 tsp. baking powder
3/4 c. finely chopped nuts
3 eggs
2 c. sugar
1 c. vegetable oil
2 tsp. vanilla
2 c. coarsely shredded zucchini
1 (8 oz.) can crushed pineapple, well drained
Preparation

Combine first 6 ingredients and set aside.
Beat eggs lightly in a large mixing bowl; add sugar, oil and vanilla.
Beat until creamy.
Stir in zucchini and pineapple.
Add dry ingredients, stirring only until dry ingredients are moistened. Pour into 2 well-greased 9 x 5 x 3-inch loaf pans.
Bake 1 hour at 350\u00b0.
Cool for 10 minutes and turn out on rack to cool.
