Apple Cinnamon Muffins - cooking recipe

Ingredients
    2 1/4 c. oat bran cereal
    1/4 c. brown sugar
    1 1/4 tsp. cinnamon
    1 Tbsp. baking powder
    1/4 c. chopped nuts
    1/4 c. raisins
    1/2 c. skim milk or evaporated skim milk
    3/4 c. concentrate frozen apple juice
    2 eggs whites or 4 oz. egg substitute
    2 Tbsp. vegetable oil
    1 medium apple, cored and chopped
    1 tsp. vanilla
Preparation
    Mix dry ingredients.
    Mix milk, apple juice, egg whites and oil in bowl or blender.
    Add dry ingredients to mix.
    Add chopped apple.
    Line the muffin pans with baking cups and fill with batter.
    Bake in 425\u00b0 oven for 17 minutes.
    After cooling, store in a large plastic bag to retain moisture and softness.
    Freezes well for use later.
