Moravian Sugar Cake - cooking recipe

Ingredients
    1 c. mashed potatoes (instant potatoes may be used)
    1 c. sugar
    1/2 c. shortening
    1 tsp. salt
    2 eggs
    4 to 5 c. flour (approximate)
    2 pkg. yeast, dissolved in 1 c. lukewarm water with 1 tsp. sugar
    melted margarine
    light brown sugar and cinnamon
Preparation
    Cream 1 cup sugar, shortening and salt.
    Add eggs, then potatoes.
    Add yeast mixture.
    Stir in flour to make a stiff, workable dough.
    Let rise until dough has doubled in size.
    Work dough and spread about 1-inch thick onto baking pans.
    Let rise again (about 2 hours).
    Punch holes in dough with fingers; sprinkle with brown sugar, cinnamon and butter.
    Bake at 350\u00b0 until done, about 20 minutes.
