Broccoli Bisque - cooking recipe

Ingredients
    3 Tbsp. butter
    1 c. leeks (washed & thinly sliced)
    1 c. mushrooms (washed & thinly sliced)
    1 c. broccoli florets
    3 Tbsp. flour
    1 c. cream (light, 1/2 & 1/2 or heavy)
    3 c. chicken broth
    1 c. Jarlsburg or Swiss cheese, finely grated/shredded
Preparation
    Melt butter over low heat. Add leeks & mushrooms & cook about 3-4 minutes, until leeks are wilted. Add flour, cook until a bit bubbly, stir until well blended. Add chicken broth - stir constantly until smooth & well blended. Add broccoli florets and cook on medium about 5 minutes. Add shredded cheese & cream. Simmer at bubbly pace 8-10 minutes - stir slowly & fairly frequently until smooth (do not boil!). Serve immediately. Also good reheated.
