Mini Turkey Loaf - cooking recipe

Ingredients
    1/4 c. each chopped onion, chopped green pepper and chopped fresh mushrooms
    1 Tbsp. olive or canola oil
    1 c. unsweetened apple juice, divided
    1/2 tsp. garlic powder
    1/2 tsp. onion powder
    1/4 tsp. salt
    1/8 tsp. pepper
    1/2-lb. ground turkey
    2 Tbsp. cornstarch
    3 Tbsp. cold water
    1 Tbsp. soy sauce (low-sodium)
Preparation
    In a small skillet, saute the onion, green pepper and mushrooms in oil until tender. Remove from heat, cool. In a large bowl, combine the vegetables,2 tablespoons apple juice, garlic powder, onion powder, salt and pepper. Crumble turkey over mixture and mix well. Shape into a loaf, put into 11X7X2-inch baking dish coated with nonstick spray. Bake for 40-45 minutes or until meat is no longer pink and meat thermometer reads 165\u00b0.
