Zucchini Bread - cooking recipe

Ingredients
    3 eggs
    1 c. vegetable oil
    1 1/2 c. sugar
    2 c. grated zucchini
    2 tsp. vanilla
    2 c. flour
    1/4 tsp. baking powder
    2 tsp. soda
    3 tsp. cinnamon
    1 tsp. salt
    1 c. raisins
    1 c. nuts
Preparation
    Beat eggs lightly; stir in oil, sugar, zucchini and vanilla. Mix flour, baking powder, soda, cinnamon and salt.
    Stir in egg mixture until well blended.
    Stir in raisins and nuts.
    Spoon into well-greased loaf pans and bake at 375\u00b0 until done in center, approximately 1 hour.
    Yields 1 large or 2 small loaves.
