Zucchini Bread - cooking recipe

Ingredients
    3 eggs
    2 c. sugar
    1 c. oil
    2 c. peeled and grated zucchini
    3 c. flour
    1 tsp. salt
    1 tsp. soda
    2 tsp. baking powder
    1 tsp. cinnamon
    2 tsp. vanilla
    1/2 c. nuts (optional)
Preparation
    Beat eggs until light and fluffy. Add sugar and oil. Beat well. Combine dry ingredients. Add to mixture and beat well. Stir in zucchini, vanilla and nuts. Bake in 2 greased and floured loaf pans for 1 hour at 350\u00b0.
