Ham And Cheese Potato Bake With Cheese - cooking recipe

Ingredients
    1 c. onion, chopped
    1 c. green pepper, chopped
    3 Tbsp. butter
    3 Tbsp. flour
    1/2 tsp. salt
    1/8 tsp. pepper
    3 c. milk
    2 c. shredded Cheddar cheese
    1 Tbsp. Dijon mustard
    1 bag frozen cottage fries
    1 bag frozen baby carrots
    1 lb. cooked ham, cut into 1/2-inch cubes
Preparation
    Butter 4-quart casserole dish.
    Saute onion and green pepper in butter over medium heat until soft, but not brown (5 minutes). Stir in flour, salt and pepper.
    Add milk.
    Simmer, stirring until thickened (2 minutes).
    Stir in 1 cup cheese and mustard.
    Cook, stirring until cheese is melted.
    Remove from heat.
    Gently fold in potatoes, carrots and ham.
    Pour into prepared casserole dish. Cover with foil.
    Bake at 425\u00b0 for 30 minutes.
    Remove foil and sprinkle with remaining cheese.
    Bake uncovered 15 minutes or until bubbly.
