Italian Pot Roast - cooking recipe

Ingredients
    4 to 5 lb. chuck roast, boneless
    2 Tbsp. olive oil
    1 tsp. minced garlic
    1/2 tsp. oregano
    1/2 tsp. basil
    1/4 c. parsley
    1/2 c. red wine vinegar
    1/2 tsp. salt
    1/2 tsp. pepper
    1 (28 oz.) can tomatoes and liquid
    1/2 c. dry sherry
    1/4 c. flour with 1/2 c. water
Preparation
    Brown meat on both sides in 8-quart pot.
    Add all ingredients except flour and water.
    Simmer 3 1/2 hours until tender; remove meat and mix the flour and water.
    Add to pot and thicken with mixture.
    Return meat to pot.
    Serve over pasta, mashed potatoes or cooked rice.
