Lee'S Lemon Pecan Bread - cooking recipe

Ingredients
    3/4 c. butter
    1 1/2 c. sugar
    3 eggs
    2 1/4 c. all-purpose flour
    1/4 tsp. baking soda
    1/4 tsp. salt
    3/4 c. buttermilk
    3/4 c. chopped pecans
    1 Tbsp. finely shredded lemon peel
Preparation
    In large mixing bowl, beat butter on medium speed of an electric mixer about 30 seconds or until softened.
    Add sugar; beat well.
    Add eggs, one at a time; beat well after each.
    Stir together flour, baking soda and salt.
    Add to mixture alternately with buttermilk; beat well after each.
    Stir in pecans and lemon peel; pour batter into a greased, floured 9 x 5 x 3 loaf pan; spread evenly.
    Bake in 350\u00b0 oven for 1 1/4 hours or until toothpick inserted in center comes out clean.
    Cool 10 minutes on wire rack.
    Remove from pan and cool completely.
    Serves 16.
