Fall Apple Nut Slaw(Diabetic) - cooking recipe
Ingredients

3 c. coleslaw mix
1 c. shredded red cabbage
2 c. Red Delicious apples
1/2 c. chopped walnuts
3/4 c. Hellmann's lite mayonnaise
1 1/2 tsp. lemon juice
sugar substitute to equal 3 Tbsp. sugar
Preparation

In a large bowl, combine coleslaw mix, red cabbage, apples and walnuts.
In a small bowl, combine mayonnaise, lemon juice and sugar substitute. Add mayonnaise mixture to cabbage mixture. Mix well to combine. Cover and refrigerate at least 30 minutes. Gently stir again just before serving. Serves 8.
