Dutch Apple Pie - cooking recipe

Ingredients
    1 pie crust
    1 large egg yolk, slightly beaten
    8 c. sliced, cored, peeled cooking apples
    1 1/2 Tbsp. lemon juice (omit, if apples are tart)
    2/3 c. sugar
    1/3 c. light brown sugar, firmly packed
    1/4 c. all-purpose flour
    1/4 tsp. salt
    3/4 tsp. cinnamon
    1/2 tsp. nutmeg
    1 c. flour
    1/3 c. sugar
    1/3 c. light brown sugar, firmly packed
    1/2 c. butter (at room temperature)
Preparation
    Preheat oven to 375\u00b0.
    Brush bottom of crust and sides evenly with egg yolk.
    Bake on a baking sheet about 5 minutes until lightly brown.
    Remove from oven.
    Reduce heat to 350\u00b0.
    Combine apples, lemon juice, 2/3 cup sugar, 1/3 cup brown sugar, 1/4 cup flour, salt, cinnamon and nutmeg.
    Mix well.
    Spoon into crust. Mix remaining flour, sugar, brown sugar and butter with fork until crumbly.
    Sprinkle streusel mixture over apples.
    Bake on baking sheet until streusel is golden and filling bubbles, about 55 minutes.
