Carrot Cookies - cooking recipe

Ingredients
    2 c. diced carrots
    1 c. sugar
    1 tsp. vanilla
    2 tsp. baking powder
    3/4 c. butter
    1 egg
    2 c. flour
    1/2 tsp. salt
Preparation
    Cook carrots, drain and mash, about 1 cup.
    Cool.
    Cream butter, sugar, egg and vanilla; beat until fluffy.
    Stir in carrots.
    Stir together dry ingredients.
    Blend into creamed mixture.
    Drop by teaspoon onto ungreased cookie sheet.
    Bake in a 375\u00b0 oven for 12 minutes.
    Yields 5 dozen.
