Pina Colada Bread Pudding - cooking recipe
Ingredients

3 slightly beaten eggs
1 (3 oz.) pkg. cream cheese, softened and cut up
1/2 c. brown sugar
3 c. dry whole wheat bread cubes (about 4 slices)
1 (8 1/4 oz.) can crushed pineapple
1 c. coconut
1/2 c. milk
1/2 c. whipping cream (optional)
2 tsp. rum (optional)
Preparation

In a large mixing bowl, combine eggs, cream cheese and brown sugar.
Stir in bread cubes, undrained pineapple, coconut and milk.
Place in a greased 10 x 6 x 2-inch dish.
Bake in a 325\u00b0 oven about 30 minutes or until a knife inserted near center comes out clean.
Remove to wire rack; cool slightly.
