Apple-Cranberry Celebration Bread - cooking recipe
Ingredients

3 c. sifted all-purpose flour
1 1/2 tsp. baking soda
1 1/2 tsp. salt
1 1/2 tsp. cinnamon
3/4 tsp. nutmeg
1/2 tsp. ground cloves
3/4 c. shortening
1 c. light brown sugar, firmly packed
3 eggs
1 1/2 tsp. pure vanilla extract
1 1/2 c. grated, raw apples
3 Tbsp. cider vinegar, plus water to make 3/4 c.
1 c. fresh cranberries, chopped
3/4 c. walnuts, chopped
Preparation

Mix and sift the flour, baking soda, salt and spices; set aside.
Cream the shortening and sugar.
Add eggs, one at a time, beating well after each addition.
Add vanilla.
Stir in flour mixture, alternating with grated apples and liquid.
Stir in cranberries and walnuts.
Turn mixture into a greased 11 1/4 x 4 1/2 x 2 1/2-inch loaf pan or 2 small loaf pans.
Bake in a preheated 350\u00b0 oven for 1 1/4 hours or until done.
Remove bread from pan or pans.
Cool on wire rack.
Makes 1 loaf.
