Spicy Vegetable-Cheese Chili - cooking recipe

Ingredients
    2 Tbsp. olive oil
    1 1/2 cups celery (chopped)
    1 1/2 cups green bell peppers (chopped)
    1 cup onions (chopped)
    3 garlic cloves (minced)
    28 oz. tomatoes
    28 oz. kidney beans
    2 Tbsp. green chiles (chopped)
    1/2 cup raisins
    1/4 cup red wine vinegar
    1 Tbsp. chili powder
    1 Tbsp. parsley (chopped)
    2 tsp. salt
    1 1/2 tsp. basil
    1 1/2 tsp. oregano
    1 1/2 tsp. cumin
    1 tsp. ground allspice
    1/4 tsp. pepper
    1/4 tsp. Tabasco sauce
    1 bay leaf
    1 can beer
    3/4 cup cashews
    1 cup swiss cheese
Preparation
    Heat oil in a large heavy pot.
    Add celery, green pepper, onion and garlic.
    Cook covered until vegetables are tender.
