Meatless Stuffed Zucchini - cooking recipe

Ingredients
    2 lb. fresh zucchini squash
    2 c. soft bread crumbs
    3/4 c. shredded Cheddar cheese
    1 egg, beaten
    1/4 c. grated onion
    1/4 c. minced parsley
    1 c. spaghetti sauce, tomatoes or gravy
    salt and pepper to taste
Preparation
    Clean zucchini; peel lightly and cut off stems.
    Cut in 3-inch lengths.
    Run apple corer through center of the zucchini lengthwise and pull out the center.
    Chop the centers very fine and add bread crumbs, then cheese, egg, onion, parsley, salt and pepper.
    Mix well and pack in hollow zucchini.
    Roll any remaining stuffing into small balls.
    Place balls and zucchini in baking dish and pour spaghetti sauce over all; cover.
    Bake at 400\u00b0 for 1 hour.
    Uncover and bake 1/2 hour longer.
