Spinach Quiche With Rice Crust - cooking recipe

Ingredients
    1 1/2 c. cooked brown rice
    1 egg
    1 1/2 oz. shredded Swiss cheese
    1 Tbsp. chopped fresh parsley
    1/8 tsp. salt
    1/8 tsp. pepper
    1 Tbsp. vegetable oil
    3/4 c. diced onion
    1 c. well drained and cooked spinach leaves
    3/4 c. skim milk
    2 eggs
    1 1/2 oz. Swiss cheese, shredded
    1/2 tsp. pepper
    1/8 tsp. salt
    dash of ground nutmeg
Preparation
    Crust:
    Mix the first 6 ingredients in a small bowl.
    Spray a 9-inch quiche dish or pie plate with nonstick cooking spray.
    Bake at 425\u00b0 for 25 minutes.
    Remove quiche dish from oven and reduce temperature of oven to 375\u00b0.
