Chicken A La Shannon - cooking recipe

Ingredients
    4 Tbsp. olive oil
    2 Tbsp. butter
    2 sliced leeks or onions
    1/2 tsp. crushed hot red peppers
    salt and pepper to taste
    4 boneless chicken breast halves, cut into small quarters
    1/2 c. sundried tomatoes, softened in water or olive oil
    1/2 c. half and half
    Parmesan cheese
    pasta (rigatoni or fettucini)
Preparation
    Melt butter and olive oil in large skillet.
    Saute leeks and garlic, red pepper, salt and pepper.
    Add chicken and saute until chicken is done, about 10 minutes.
    Reduce heat; add sundried tomatoes, then add half and half.
    Pour over cooked pasta. Sprinkle with Parmesan cheese.
