Ingredients

2/3 c. converted type rice
2 1/4 c. water
2/3 c. sugar
2 tsp. cornstarch
1/2 tsp. salt
2 2/3 c. half and half
2 Tbsp. butter
1 tsp. vanilla
4 egg yolks
Preparation

In a medium saucepan, bring the rice and water to a boil. Simmer, covered, until the rice is very tender and most of the water is absorbed, about 25 minutes.
