Mid-Eastern Potato Salad - cooking recipe

Ingredients
    4 potatoes, peeled and cubed
    1/4 c. parsley, chopped
    1 medium onion, chopped
    3 Tbsp. olive oil
    1/2 tsp. salt
Preparation
    Boil potatoes until tender.
    Toss all remaining ingredients with potatoes.
    Let stand 15 minutes.
