Healthful Date Bread - cooking recipe
Ingredients

1 (8 oz.) pkg. pitted dates, snipped (no sugar)
1 c. raisins
1 1/2 c. boiling water
2 c. whole wheat flour
1 tsp. baking soda
1 tsp. baking powder
1/4 tsp. salt
2 slightly beaten egg whites
1 tsp. vanilla
1/2 c. chopped almonds
Preparation

In a medium mixing bowl, combine dates and raisins.
Pour boiling water over the fruit.
Set aside; let cool.
In large mixing bowl, add dry ingredients.
Stir egg whites and vanilla in cooled fruit mixture, then add this to flour mixture.
Stir until blended (will be thick).
Spread into lightly greased 9 x 5 x 3-inch pan.
Bake at 350\u00b0 for 40 to 50 minutes (glass dish bake 30 minutes at 325\u00b0), or until toothpick comes out dry.
Cool in pan for 10 minutes.
Turn onto rack.
Wrap and store overnight until ready to serve.
