Italian Cheesecake - cooking recipe

graham cracker crumbs
2 (15 oz.) cartons Ricotta cheese
1 c. sugar
5 egg yolks
1/3 c. sifted all-purpose flour
grated rind of 1 large lemon
2/3 tsp. vanilla
5 egg whites
1/3 c. sugar
1/3 c. whipping cream (optional)
Preparation

Butter a 9-inch spring-form pan and sprinkle with graham cracker crumbs.
Use an electric mixer, a food processor or a blender to beat Ricotta cheese until smooth.
Gradually add sugar and egg yolks, beating each addition.
Beat in flour, grated lemon rind and vanilla.
