French Green Salad - cooking recipe
Ingredients

1 Tbsp. lemon juice
1 tsp. Dijon mustard
2 Tbsp. defatted low salt chicken stock
1 tsp. canola oil
1 small clove garlic, crushed
salt and freshly ground black pepper to taste
1/2 small head romaine lettuce
1 small Belgian endive
Preparation

Whisk lemon juice and mustard together in a salad bowl.
Whisk in chicken stock, oil and garlic.
Salt and pepper to taste.
Wash romaine lettuce.
Tear into bite size pieces and add to bowl. Wipe endive with a damp paper towel.
Slice into pieces and add to bowl.
Toss well.
Makes 2 servings.
