Sweet And Sour Potato Salad(12 To 15 Servings) - cooking recipe

Ingredients
    5 lb. small potatoes
    1 onion, finely chopped
    1 1/3 c. white vinegar
    1 lb. bacon, cut in 1/2-inch pieces
    4 eggs, beaten
    1 c. sugar
Preparation
    Cook potatoes in boiling water to cover; cook 30 minutes. Drain; cool slightly.
    Peel and quarter.
    Cook bacon until crisp, drain and set aside.
    Cook onions until soft and clear.
    Combine eggs, vinegar and sugar in a small saucepan; cook over moderate heat.
    Stir constantly until thickened (about 4 minutes) until temperature reaches 160\u00b0.
    Combine potatoes, bacon and onion.
    Pour vinegar mixture over potato mixture.
    Toss gently.
    Serve immediately.
