Whole Wheat Carrot Cake - cooking recipe

Ingredients
    1 c. cooking oil
    1 c. sugar
    1 c. brown sugar, firmly packed
    1 tsp. vanilla
    2 c. whole wheat flour
    1 tsp. salt
    1/3 c. nonfat dry milk
    1 tsp. baking soda
    4 eggs
    1 tsp. baking powder
    2 tsp. cinnamon
    3 c. carrots, shredded
    1 c. walnuts, chopped
    confectioners sugar
Preparation
    In a medium bowl, blend oil, sugar and brown sugar on low speed until mixed.
    Add vanilla.
    Beat in eggs, one at a time, blending well.
    In separate bowl, stir together flour, salt, dry milk, soda, baking powder and cinnamon.
    Add to 4 egg mixture until well blended.
    Stir in carrots and walnuts by hand.
    Pour into greased and floured 10-inch tube or 12-cup fluted tube pan. Bake at 350\u00b0 for 50 to 60 minutes or until the cake tests done. Cool in pan; invert onto a serving plate.
    Sprinkle sifted confectioners sugar on top.
    Serves 12 to 16.
