Candied Yams With Apple And Banana - cooking recipe

Ingredients
    3 Tbsp. margarine
    6 oz. apple juice or cider
    6 oz. orange juice
    1/4 c. light brown sugar
    1/2 tsp. salt
    1 cinnamon stick
    3 whole cloves
    3 allspice berries
    1 lb. yams, peeled and cut in 1/2-inch slices
    1 apple (Golden Delicious), peeled, cored (1/4-inch slices)
    1 banana (ripe), peeled (1/2-inch slices)
    peanuts, lightly roasted
Preparation
    Melt the fat in a large skillet. Stir in apple and orange juices, salt and spices. Add the yams. Bring to a boil. Cover, lower the heat and simmer for 10 minutes (or until yams are just tender). Add apples and bananas and simmer for an additional 2 minutes.
    Serve with chopped roasted peanuts. Yield:
    4 portions.
