Cheesy Zucchini - cooking recipe

Ingredients
    3 c. chunked zucchini
    1/2 diced green pepper
    1/2 large diced onion
    3 beaten eggs
    1/4 c. melted butter
    1 c. milk
    2 c. shredded Longhorn cheese
    pepper
Preparation
    Cook the first three ingredients together for 5 minutes, then drain well.
    Combine the remaining ingredients and then fold in 1 1/2 cups crushed Ritz crackers.
    Sprinkle paprika on top.
    Bake in a greased shallow pan at 325\u00b0 for 25 to 30 minutes.
