Scalloped Carrots With Cheese - cooking recipe

Ingredients
    12 medium carrots, sliced and cooked
    1 small onion, chopped
    1/4 c. butter or margarine
    1/4 c. flour
    1 tsp. salt
    1/4 tsp. dry mustard
    2 c. milk
    1/8 tsp. pepper
    10 slices American or sharp Cheddar cheese
    1/4 tsp. celery salt
    cracker crumbs (can use crushed corn flakes instead of cracker crumbs)
Preparation
    Cook carrots until tender, drain and set aside.
    Cook onion in butter in saucepan for 2 to 3 minutes.
    Add milk, do not boil. Stir in flour, salt and mustard, until thick and smooth, then add pepper and celery salt.
    Pour into 2-quart casserole.
    Arrange cooked carrots and cheese.
    Pour sauce over carrots, top with crumbs and \"dot\" with butter.
    Bake at 350\u00b0 for 35 to 40 minutes.
