Banana Blueberry Muffins - cooking recipe
Ingredients

1 c. sugar
1/2 c. oil
1 c. mashed ripe bananas (2 to 3)
1/2 c. plain yogurt
1 tsp. vanilla
2 eggs
2 c. flour
1 tsp. baking soda
1/2 tsp. salt
1/2 c. chopped pecans (optional)
1 c. fresh or frozen blueberries
Preparation

Preheat oven to 350\u00b0.
Line muffin tins with paper baking cups.
In a large bowl, beat sugar and oil together, then add bananas, yogurt, vanilla and eggs.
Blend well.
In small bowl, combine dry ingredients.
Add to banana mixture and stir just until dry ingredients are moistened.
Gently stir in blueberries. Pour into tins.
Bake for 20 minutes.
Can also be baked in loaf pan for 40 to 50 minutes.
