Cider Chicken Casserole - cooking recipe

Ingredients
    3 tsp. corn oil for sauteing
    1/4 c. flour
    1 1/2 lb. skinned, boned chicken breasts, cut in strips
    fresh ground pepper
    3 medium sized onions, sliced
    1 c. apple cider or more to keep moist
    3 fresh tomatoes, skin off, chopped or 14 oz. can, drained
    1 Tbsp. fresh basil, chopped or 1 tsp. dried
    1 tsp. grated orange peel
Preparation
    Coat chicken lightly with flour.
    Heat oil in large pan and brown chicken a bit at a time.
    Remove chicken and put aside. Saute onions in same pan, adding a little cider if needed.
