Ingredients

1 c. yellow cornmeal
1 1/3 c. cold water, divided
1/4 c. plus 2 Tbsp. Parmesan cheese, divided
1 lb. ground beef
1 medium onion, sliced
1 clove minced garlic
1 small green pepper, sliced
3/4 Tbsp. each: basil and oregano
1/8 Tbsp. black pepper
1 can refried or pinto beans
1 c. or more shredded Mozzarella cheese and/or Cheddar cheese
1 (8 oz.) can tomato sauce
Preparation

Heat oven to 375\u00b0.
In a small bowl, mix the cornmeal with 2/3 cup of cold water.
In a small heavy saucepan, bring the remaining 2/3 cup of water to a boil.
Gradually add the cornmeal mixture to the boiling water.
Lower heat and whisk with a fork until thick, about 3 minutes.
Remove from heat and stir in 2 tablespoons Parmesan cheese.
