Potato Candy - cooking recipe

Ingredients
    1 small cooked Idaho potato or medium potato
    peanut butter
    confectioners sugar, approximately 1 box
Preparation
    Mash potato.
    Add confectioners sugar to potato to make a stiff
    dough.
    Roll
    out
    on waxed paper dusted with confectioners sugar (like a pie crust).
    If too much for one, divide and\tmake 2.\tSpread peanut butter over entire surface.
    Roll up
    like
    a jelly roll.
    Refrigerate until firm.
    Slice.
    Keep refrigerated. Leftover mashed potatoes may be used.
