Italian Beef - cooking recipe

Ingredients
    3 lb. beef rump roast
    1 stalk celery, diced
    1 medium onion, chopped
    1 tsp. garlic salt
    salt and pepper to taste
    1 bay leaf
    2 Tbsp. soy sauce
    1 large green pepper or 2 small, sliced lengthwise
Preparation
    Place meat in Dutch oven or heavy saucepan.
    Add celery, onion, garlic salt, salt, pepper, bay leaf and soy sauce.
    Cover roast with water.
    Bring to a boil; cover and simmer for 3 hours.
    Cool the roast in the broth in the refrigerator overnight or several hours.
    Thinly slice the roast.
    Simmer the green pepper for about 5 minutes.
    Place the sliced meat in a shallow pan (13 x 9-inch) in layers.
    Cover the meat with the peppers.
    Pour the juice over the meat; add more garlic salt and soy sauce, if desired.
    Cover with foil and heat in a slow oven (300\u00b0) for about 15 to 20 minutes or until warmed through.
