Zucchini And Corn - cooking recipe
Ingredients

1/4 c. oil
2 tomatoes, cut into eighths
6 zucchini, cut into 1/2-inch slices
4 ears of corn kernels, cut from cob
1/2 tsp. oregano
salt and pepper
Preparation

In a large skillet, place on grill rack.
Heat oil and saute tomatoes until mushy.
Stir in zucchini and corn kernels.
Add oregano.
Stir to blend.
Cover and simmer, stirring occasionally, until zucchini is tender.
Season to taste with salt and pepper.
