Pineapple Coconut Cookies - cooking recipe

Ingredients
    1/2 c. solid all-vegetable shortening
    1/2 c. butter
    1 egg
    1 (8 oz.) can crushed pineapple (undrained)
    3 1/2 c. sifted all-purpose flour
    1 tsp. baking soda
    1/2 tsp. salt
    1 c. coconut
Preparation
    Preheat oven to 400\u00b0.
    Cream together shortening, butter and sugar.
    Beat in egg.
    Stir in pineapple.
    Sift together dry ingredients and blend well into shortening mixture.
    Stir in coconut.
    Cover and chill dough 2 hours or more.
    Drop rounded teaspoonful of dough onto lightly greased baking sheets.
    Bake in preheated oven 8 to 10 minutes or until golden brown.
    Cool cookies on rack.
    Makes 4 to 5 dozen.
