2 1/2 lb. boneless chicken pieces, skinned
2 Tbsp. vegetable oil
1 (12 oz.) jar salsa *
1/2 c. water
1 (17 oz.) can Niblets corn, drained
1 green, red or yellow bell pepper, chopped
fresh cilantro (optional garnish)
