Skillet Beef Enchilada - cooking recipe

Ingredients
    1 lb. ground beef
    1 large onion, chopped
    1 (15 1/4 oz.) can kidney beans, drained
    1 (13 3/4 oz.) can chicken broth
    1 pkg. taco seasoning mix
    1 (8 oz.) can corn, drained
    1 1/2 c. Minute rice
    1/2 c. sour cream
    8 flour tortillas, steamed
Preparation
    Brown beef with onion in large skillet, about 5 minutes.
    Add beans, broth, taco mix and corn.
    Bring to a full boil.
    Reduce heat; simmer 5 minutes.
    Stir in rice.
    Cover, remove from heat. Let stand 5 minutes.
    Stir in sour cream.
    Serve with tortillas. Serves 4.
