Sharon'S Sweet Potato Soup - cooking recipe
Ingredients

1 1/4 lb. sweet potato, peeled and cubed
1 onion, cut in cubes
1 (14 oz.) can chicken broth
1 c. apple juice
1/2 tsp. thyme
1/4 tsp. pepper
1/4 c. half and half or milk
Preparation

In large saucepan, combine sweet potatoes (cubed), onion and broth. Bring to boil; reduce heat and cook, covered, for 10 to 12 minutes or until tender. Take half and puree in a blender or food processor (take care not to splash hot liquid). Return to saucepan. Stir in apple juice, thyme and pepper. Season to taste with salt. Heat thoroughly. Stir in half and half or milk.
