Stuffed Zucchini - cooking recipe

Ingredients
    3 medium zucchini
    1/4 c. chopped onion
    3/4 c. chopped tomato
    3/4 c. fresh sliced mushrooms
    1/8 tsp. pepper
    1 1/4 tsp. dried Italian seasoning
    1 Tbsp. Parmesan cheese (grated)
Preparation
    Place zucchini in a steamer over boiling water.
    Cover and steam 10 to 12 minutes.
    Cut zucchini in half lengthwise; remove pulp, leaving 1/4 inch thick shells.
    Dice pulp and set aside; save zucchini shells.
    Coat a nonstick skillet with cooking spray; place over medium heat until hot.
    Add onions and mushrooms; saute until tender.
    Stir in diced zucchini pulp, tomato, pepper and Italian seasoning.
    Cook until thoroughly heated, stirring often.
    Spoon zucchini mixture evenly into shells; sprinkle with cheese.
    Arrange stuffed shells in a 13 x 9 x 2-inch baking pan.
    Bake at 350\u00b0 for 25 minutes, or until heated through.
    Serves 6.
