Zucchini Pineapple Bread - cooking recipe

Ingredients
    3 eggs
    1 c. oil
    2 c. sugar
    3 c. flour
    3 tsp. vanilla
    1 tsp. baking powder
    1 tsp. baking soda
    1 tsp. salt
    1/2 c. raisins
    3 tsp. cinnamon
    1 c. chopped walnuts
    1 c. crushed pineapple, drained
    2 c. zucchini, grated
Preparation
    In a large bowl, beat eggs by hand until frothy, about 3 minutes. Add oil, sugar, vanilla and zucchini; mix well with spatula.
    Add dry ingredients and mix well. Spray 2 loaf pans with a cooking spray and lightly flour.
    Divide batter evenly between pans.
    Bake at 325\u00b0 for 1 hour and 20 minutes. Cool in pans, then gently turn out onto serving dish.
