Hearty Chicken Loaf With Whole Wheat Crumbs - cooking recipe

Ingredients
    1 1/4 c. fresh crumbs from a 100% whole grain bread (not supermarket sandwich loaves)
    1 medium red bell pepper, finely chopped (1 c.)
    2 lb. ground chicken
    1/2 c. chicken stock or canned broth
    1/4 c. olive oil
    2 large leeks (white part only), well cleaned and finely chopped (2 c.)
    2 garlic cloves, minced
    2 eggs, beaten
    2 tsp. salt
    1 tsp. freshly ground black pepper
Preparation
    Position rack in middle of oven and preheat to 400\u00b0.
    Spread bread crumbs in shallow metal pan (like cake tin) and toast them in oven, stirring often, until lightly browned (10 minutes).
    Cool to room temperature.
    Lower oven temperature to 350\u00b0.
