Vegetarian Meatless Spaghetti Sauce - cooking recipe

Ingredients
    1 c. chopped bell peppers
    1 c. chopped onions
    1 c. chopped celery
    1 c. shredded carrots
    1 c. sliced mushrooms
    2 large cans tomatoes, sieved
    1 tsp. each: basil, oregano and dried herbs or Mrs. Dash
    2 bay leaves
    2 cloves garlic, chopped fine
    1/2 tsp. tarragon
Preparation
    Saute all vegetables in large pan with 1/4 cup olive oil 5 to 7 minutes; add tomatoes and all spices and simmer for about 1/2 hour.
    Serve over a good semolina or spinach pasta and sprinkle generously with freshly grated Parmesan cheese.
    Serve with a large green salad and garlic bread.
