Ingredients

1 3/4 c. flour
2 tsp. sugar
1 tsp. salt
1 1/2 tsp. baking powder
1 tsp. baking soda
2 eggs, well beaten
2 c. buttermilk
2 to 4 Tbsp. melted butter
Preparation

Sift flour before measuring, then resift with sugar, salt, baking powder and soda.
Beat eggs, then mix with buttermilk. Combine the dry and liquid ingredients with a few quick strokes, then add melted butter.
Mix ingredients well, but with as few strokes as possible.
Batter will be lumpy.
Bake on hot griddle until brown.
Serves:
20 (4-inch cakes).
