Crowd Pleasing Potato Salad - cooking recipe
Ingredients

1 gal. potatoes (16 large), cooked, peeled and sliced
10 hard-cooked eggs
1 c. chopped onion
1 c. chopped celery
1 c. light cream
1/3 c. vinegar
1/3 c. sugar
3 Tbsp. prepared mustard
1 1/2 tsp. salt
2 c. salad dressing
Preparation

Place potatoes in a large bowl.
Separate eggs.
Chop whites and add to potatoes with onion and celery.
Toss gently.
In another bowl, mash yolks with salad dressing, cream, vinegar, mustard and salt.
Pour over potatoes and stir to coat.
Garnish with parsley.
Cover and chill.
Yield: 16 to 20 servings.
